Banana-Oat Pancakes Belong In The Freezer

Costco quantities make more sense when breakfast is cooked once and frozen. For banana-oat pancakes, I use:

• 1 banana
• 1 egg
• 1/2 cup oats
• 2 tablespoons plain Greek yogurt

I blend everything, cook small pancakes, and cool them on a rack. Then I freeze them in one layer before moving them into a bag. That first freeze keeps them from becoming one solid stack.

Two pancakes can go from freezer to toaster oven while I cut fruit. I keep nut butter thinly spread and serve the pancakes in pieces the toddler can handle.
