Healthy Kefir Pancakes
An Old Ukrainian Tradition
Ingredients
- 600 ml kefir
- 2 eggs
- 4 tbsp of melted butter
- 1 tsp baking soda
- 1/2 cup of frozen berries (to replace sugar)
- 540 g all-purpose flour
Instructions
1. Prepare the Dough
In a large bowl, combine the kefir, egg, sugar, melted butter, frozen berries and baking soda. Mix well until smooth.
2. Add Flour
Gradually add the flour and mix until fully incorporated. The dough should be thick and smooth.
3. Heat the Pan
Preheat a frying pan over medium heat and lightly grease it with oil.
4. Fry the Pancakes
Spoon the dough onto the pan, forming small pancakes slightly larger than classic fritters.
Cook for 2–4 minutes per side, until golden brown.
Lightly oil the pan before cooking each new batch.
Serving Suggestions
Serve hot with sour cream or honey.
