Salmon And Sweet Potato Patties Freeze Well

Costco salmon comes in more than I need for one toddler meal. I portion most of it immediately, then use the cooked leftovers for these soft patties.

Ingredients

  • 1 cup cooked salmon, checked carefully for bones
  • 1 cup mashed sweet potato
  • 1 egg
  • 1/2 cup finely chopped cooked broccoli
  • 2–4 tablespoons oat flour

Method

  1. Mix everything, adding enough oat flour for the mixture to hold together.
  2. Form small, flat patties.
  3. Pan-cook in a little olive oil until both sides are browned and the egg is fully cooked.
  4. Cool completely, then freeze the patties in a single layer before moving them into a container.

I can thaw one or two at a time. For the toddler, I serve them soft and broken into manageable pieces rather than as a whole round patty.
