Set Up Burritos Before Opening The Tortillas

My Costco burrito list starts with a large pack of 10-inch flour tortillas and 3 pounds of beef. That is enough food to make a messy counter if I open the tortillas too early.

I set up the whole line first:

  • cook the beef, onion, and bell pepper
  • drain the black beans and corn
  • put the shredded cheese in a bowl
  • tear the foil and prepare the freezer containers
  • let the hot filling cool a little

Then I open the tortillas and fill them one at a time. The first burrito and the last one get roughly the same amount, and I can wrap the full batch without stopping to hunt for foil.
